As we all feel the Credit Crunch bite even harder in the run up to the Festive season why not satisfy the whole family with one of Avril's tasty recipes that won't break the bank and are fantastic value.
Winter Warming Beef Casserole - Cost £4.23 for 4 people Items from your store cupboard
Braising beef £2.50 per 300g 2 Beef stock cubes
2 Loose onions £0.40p Plain flour/self raising flour
4 Loose carrots £0.35p Salt and pepper
spring green cabbage £0.79p Dried mixed herbs
Total £4.04 (Approx)
Method
1.
Saute beef for 5 minutess until golden brown

Add chopped onions and chopped carrots and saute a further 5 minutes.

Stir in a little plain flour (optional). Dissolve stock in 1 litre of hot water water and add to casserole.
Preparation:
15-20 minutes, Oven temp:180 C, Gas Mark 4, Cooking time: 1hr - 2 hr
Dumplings
2 oz Light suet (1/4 packet) £0.19p (approx)
4 oz Self raising flour
Pinch of salt
Dried mixed herbs
Approx 5 table spoons of cold water to make pliable dough
Method
Divide into 8, shape into balls, place on top of casserole for 20 mins before end of cooking time.
Substitute braising beef for chicken breasts, a little more expensive, 4 breasts costs approx £3.89 or vegetarian quorn pieces, usually bought frozen, cost approx £1.99 per 300 - reduce cooking time for chicken and quorn - 45 minutes - 1 hour.
Serve with bolied shredded cabbage , which is packed with rich vitamins!
